Spiced sardine “empanadas”

Ingredients for 2 people:

Dough:

  • 250 g flour
  • 50 g butter
  • 1 egg
  • 100 ml of water
  • ½ tsp salt

Filling:

  • 150 g tuna
  • olive oil
  • 2 sardines in spiced olive oil
  • parsley
  • ½ onion
  • 1 red pepper
  • 1 clove of garlic

Preparation:

For the dough mix all ingredients together and let rest for ½ hour. Roll out to a thickness of about 3mm and cut out round circles (about the size of a teacup). For the filling, cut all the ingredients into small pieces and always fill and fold an empanada with about a generous tablespoon of the filling. Bake in the oven at 190 degrees for about 7 minutes until golden brown, bake a bit longer if required.

In the end pair these amazing empanadas with a great tomato sauce rice or a rich salad.
